Ingredients
  

Noodles and Sauce
  • 12 oz Korean noodles (e.g., Japchae or noodles of your choice)
  • 3 tbsp Soy sauce
  • 2 tbsp Gochujang (Korean chili paste)
  • 1 tbsp Brown sugar
  • 3 cloves Garlic (minced)
  • 2 tsp Sesame oil For sauce
Vegetables
  • 2 cups Vegetables (e.g., bell peppers, carrots, and spinach; cut into thin strips)
  • 2 stalks Scallions (for garnish, sliced)
  • 1 tbsp Sesame seeds (for garnish)

Method
 

Cooking Noodles
  1. Start by boiling water in a large pot. Once it’s at a rolling boil, add your choice of Korean noodles. Follow the package instructions, typically cooking them for about 5-7 minutes until al dente. Drain and set aside.
Preparing the Sauce
  1. In a small bowl, whisk together soy sauce, gochujang, brown sugar, minced garlic, and sesame oil until well combined. This will become your flavorful sauce.
Sautéing Vegetables
  1. In a large skillet or wok, heat a teaspoon of sesame oil over medium-high heat. Toss in your vegetables and stir-fry them for about 3-4 minutes until they’re slightly tender but still crisp.
Combining Ingredients
  1. Add the cooked noodles to the skillet with the sautéed vegetables. Pour the sauce over the noodles and toss everything together gently over medium heat for another 2-3 minutes, ensuring the noodles are coated in that delectable sauce.
Serving

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. They can also be frozen for about a month. Reheat in the microwave or on the stovetop with a splash of water or broth to help retain texture.
