Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, combine the mashed bananas, cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well blended.
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix—lumps are perfectly fine!
- If you’re using walnuts or pecans, fold them into the batter at this stage.
- Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Can freeze for up to 3 months—slice and use a freezer-safe bag.
