Dry Ingredients

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well blended.
  3. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix—lumps are perfectly fine!
  5. If you’re using walnuts or pecans, fold them into the batter at this stage.
  6. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Can freeze for up to 3 months—slice and use a freezer-safe bag.
