Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the peanut butter, sugar, and egg. Beat until smooth and creamy.
  3. Stir in the vanilla extract and baking soda.
  4. Gently fold in the Reese's Pieces.
  5. Using a tablespoon or cookie scoop, form balls of cookie dough and place them on a lined baking sheet, leaving space for spreading.
  6. Bake for 10-12 minutes, until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
