  • 2 pieces chicken breasts (boneless and skinless)
  • 8 oz pasta (like penne or fusilli)
  • 1 cup chicken broth
  • 1 cup marinara sauce
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup grated Parmesan cheese
  • for garnish Fresh basil

Method
 

Preparation
  1. Gather all your ingredients. Cut the chicken breasts into bite-sized pieces and season them with salt, pepper, and Italian seasoning.
Cooking
  1. Turn your Instant Pot on and select the ‘Sauté’ function. Once it’s heated, add a small splash of olive oil and then the chicken pieces. Sauté until they are golden brown, about 3-5 minutes.
  2. Pour in the chicken broth, ensuring the chicken is submerged. Add the pasta evenly over the chicken and pour the marinara sauce on top. Do not stir.
  3. Toss the halved cherry tomatoes on top.
  4. Close the lid of your Instant Pot, set the valve to sealing, and select ‘Manual’ or ‘Pressure Cook’ on high pressure for 8 minutes.
  5. After the cooking cycle, allow the pressure to release naturally for about 5 minutes, then carefully switch the valve to venting to release any remaining pressure.
  6. Once the pressure is released, open the lid and stir the contents well. Add the grated Parmesan cheese and mix until it melts into the sauce. Garnish with fresh basil and enjoy!

Notes

Feel free to add veggies like bell peppers or spinach for added nutrition. You can also substitute the chicken with shrimp or chickpeas for a vegetarian version. Ensure you’re measuring your pasta correctly to avoid mushiness.
