Preparation
- Boil a pot of salted water and cook the pasta according to package instructions until al dente (usually around 8-10 minutes). Drain and rinse under cold water to stop the cooking process.
- While the pasta cooks, wash and cut your cherry tomatoes in half, and chop the fresh basil leaves.
- In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and chopped basil.
- Drizzle the olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste. Toss everything gently until well combined.
- Taste your creation and adjust the seasoning if needed.
- Serve immediately or chill in the fridge for about 30 minutes to let the flavors meld together.
Notes
For best texture, add the dressing right before serving. Store leftovers in an airtight container in the refrigerator for up to three days. Freeze without mozzarella for optimal quality.
