Ingredients
  

Dry Ingredients
  • 1 and 3/4 cups all-purpose flour Make sure it is measured accurately using the spoon and level method.
  • 3/4 cup unsweetened cocoa powder
  • 2 cups sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Consider using egg whites for a lighter cake.
  • 1 cup milk Can be substituted with almond or soy milk for a dairy-free version.
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
Additional Ingredients
  • 1 cup boiling water Adds moisture to the cake batter.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pans.
  2. In a large mixing bowl, mix all the dry ingredients until well combined.
  3. Add the wet ingredients and beat with an electric mixer on medium speed for about 2 minutes.
  4. Carefully stir in the boiling water until well incorporated.
Baking
  1. Pour the batter into prepared cake pans and bake for 30 to 35 minutes.
  2. Check for doneness by inserting a toothpick in the center, it should come out clean.
Cooling and Frosting
  1. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks.
  2. Once cooled, frost with your choice of frosting, such as chocolate buttercream or ganache.

Notes

To maintain freshness, store the cake in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. For longer storage, freeze individual slices wrapped in plastic wrap for up to three months.
