  • 2 pieces chicken breasts (skinless, boneless) Cut into bite-sized cubes for even cooking.
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots) Chopped uniformly for even cooking.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Begin by cutting the chicken breasts into bite-sized cubes.
  2. Rinse the mixed vegetables and chop them into similar sizes for even cooking.
Seasoning
  1. In a large bowl, combine the chicken and mixed vegetables.
  2. Drizzle with olive oil and sprinkle on the salt, pepper, garlic powder, and paprika.
  3. Toss everything together until well-coated in the seasoning.
Cooking
  1. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. Place the seasoned chicken and vegetable mixture into the air fryer basket in a single layer.
  3. Air fry for about 15-20 minutes, shaking the basket halfway through.
  4. Check for doneness; the chicken should be golden brown and cooked through with an internal temperature of 165°F (74°C).
  5. The vegetables should be tender yet slightly firm.
Serving
  1. Once ready, carefully remove the chicken and vegetables from the air fryer and serve hot.
  2. Pair with your favorite grain like rice or quinoa for a complete meal.

Notes

If you don’t have chicken breasts, feel free to use chicken thighs. You can also switch up the mixed vegetables based on what’s in season. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
