Ingredients
  

For the crust
  • 2 medium zucchinis Fresh and Halal-certified
  • 1 cup shredded mozzarella cheese For topping
  • 1/2 cup grated Parmesan cheese Adds richness
  • 1 large egg Binding agent
  • 1 teaspoon Italian seasoning For flavor
  • to taste Salt
  • to taste Pepper
Toppings
  • to taste Toppings of your choice (e.g., Halal-friendly pepperoni, bell peppers, onions) Customize as desired
For serving
  • as needed Marinara sauce For dipping

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice the zucchinis into thin rounds or halves.
  3. Use a clean kitchen towel or paper towels to gently press the zucchini slices, removing any excess moisture.
  4. In a mixing bowl, combine the shredded zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well.
  5. On a baking sheet lined with parchment paper, spoon the zucchini mixture into pizza shapes, spaced evenly.
Baking
  1. Bake in the oven for about 15-20 minutes, until golden brown and firm.
  2. Remove from the oven and add your choice of toppings. Return to the oven for an additional 5-7 minutes to melt the cheese.
Serving
  1. Allow to cool slightly before serving with warm marinara sauce on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze cooked pizzas for up to three months. Reheat frozen pizzas in the oven at 375°F (190°C) for 15-20 minutes.
