White Lasagna with Chicken, Spinach, and Mushrooms

Lasagna Ingredients
  • 12 sheets Lasagna sheets
  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach, tightly packed
  • 2 cups mushrooms, sliced
  • 1.5 cups ricotta cheese
  • 1.5 cups mozzarella cheese, grated
  • 1 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • a pinch nutmeg (optional)
  • 2 cups chicken broth or béchamel sauce

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onions and minced garlic, sautéing until fragrant.
  3. Stir in the sliced mushrooms and spinach, cooking until the spinach is wilted and mushrooms are tender. Season with salt, pepper, and nutmeg, if desired.
  4. In a separate bowl, blend your ricotta cheese with half of the mozzarella and Parmesan cheese, then set aside.
Assembly
  1. Spread a thin layer of chicken broth or béchamel on the bottom of a baking dish.
  2. Layer 3 lasagna sheets, followed by half of the chicken, half of the sautéed vegetable mixture, and half of the ricotta mixture.
  3. Repeat the layering twice more, finishing with a final layer of pasta and a generous amount of the remaining mozzarella and Parmesan cheeses on top.
Baking
  1. Cover with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbling.
Serving
  1. Let your white lasagna sit for about 10 minutes before slicing. This will help it to set for easier serving.

Notes

For vegetarian option, substitute grilled vegetables for chicken. Prepare spinach and mushroom mixture a day ahead for deeper flavor. Ensure lasagna sheets are cooked al dente to prevent mushiness.
