Preparation
- Start by heating a skillet over medium heat. Add a small amount of butter or oil.
- Once hot, add the diced onion and sauté until translucent, about 3-5 minutes.
Cooking the Beef
- Increase the heat to medium-high and add the ground beef to the skillet.
- Season with salt and pepper. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Assembling the Quesadillas
- Lay the flour tortillas flat on a clean surface.
- On half of each tortilla, sprinkle a generous layer of shredded cheese.
- Next, add a portion of the beef mixture, followed by a few pickle slices. Top with more cheese and fold the tortillas over to encase the filling.
Grilling the Quesadillas
- Lightly wipe the skillet clean and return it to the heat.
- Place one or two quesadillas in the skillet (depending on your pan size) and grill for 2-3 minutes on each side, until golden brown and crispy.
- Repeat with the remaining tortillas.
Serving
- Once cooked, slice the quesadillas into wedges, serve hot, and enjoy the crispy, melty goodness!
