  • 8 oz shredded cheese (cheddar or your choice) Feel free to mix cheeses for added flavor.
  • 4 large flour tortillas
  • 1 medium onion, diced Caramelize for extra flavor if desired.
  • 2-3 pieces pickles, sliced Optional, add for a tangy crunch.
  • to taste Salt and pepper Season to your preference.

Preparation
  1. Start by heating a skillet over medium heat. Add a small amount of butter or oil.
  2. Once hot, add the diced onion and sauté until translucent, about 3-5 minutes.
Cooking the Beef
  1. Increase the heat to medium-high and add the ground beef to the skillet.
  2. Season with salt and pepper. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Assembling the Quesadillas
  1. Lay the flour tortillas flat on a clean surface.
  2. On half of each tortilla, sprinkle a generous layer of shredded cheese.
  3. Next, add a portion of the beef mixture, followed by a few pickle slices. Top with more cheese and fold the tortillas over to encase the filling.
Grilling the Quesadillas
  1. Lightly wipe the skillet clean and return it to the heat.
  2. Place one or two quesadillas in the skillet (depending on your pan size) and grill for 2-3 minutes on each side, until golden brown and crispy.
  3. Repeat with the remaining tortillas.
Serving
  1. Once cooked, slice the quesadillas into wedges, serve hot, and enjoy the crispy, melty goodness!

Notes

For a lighter option, consider using lean turkey or ground chicken. Ensure you do not overcrowd the skillet while grilling for a crispy texture. If you have leftovers, store in an airtight container for up to 3 days.
