Preparation
- In a mixing bowl, take your cooked chickpeas and mash them until they are mostly smooth, leaving a few chunks for texture.
- Add in the oats, nutritional yeast, smoked paprika, cumin, salt, and pepper. Stir until everything is evenly combined.
- In a pan, heat a tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until they are softened and aromatic, about 3-4 minutes.
- Fold the sautéed mixture into the chickpea blend. Mix thoroughly until you create a cohesive mixture. You want it to be pliable, not too wet or too dry.
- Form the mixture into small, round patties, about 2-3 inches wide.
- Heat the remaining tablespoon of olive oil in the pan over medium heat. Once hot, carefully add the patties. Cook each side for about 4-5 minutes or until golden brown and crispy.
- Once cooked, serve them warm with your favorite toppings and sides!
Notes
These patties can be prepped in advance and stored in the fridge. For a healthier option, bake them at 375°F for about 20-25 minutes.
