Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • a pinch none salt
Wet Ingredients
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1/4 cup coconut oil, melted Ensure it's melted but not too hot.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease your madeleine pan with coconut oil.
  2. In a large bowl, combine the almond flour, coconut flour, baking powder, and salt. Whisk together until well blended.
  3. In a separate bowl, whisk the melted coconut oil, maple syrup, almond milk, and vanilla extract until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid over-mixing.
  5. Spoon the batter into the madeleine molds, filling each about ¾ full.
Baking
  1. Bake the madeleines in the preheated oven for about 10-15 minutes or until the edges are golden brown and a toothpick comes out clean.
Cooling
  1. Let the madeleines cool in the pan for about 5 minutes before transferring them to a wire rack.
  2. Enjoy them warm or at room temperature!
