Ingredients
  

Main Ingredients
  • 1 cup cooked lentils Make sure they are cooked until tender but not mushy.
  • 1 cup breadcrumbs Can be store-bought or homemade.
  • 1/2 cup nutritional yeast
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • as needed oil Vegetable oil for frying Ensure oil is enough to cover the bottom of the pan.

Preparation
  1. Make sure your lentils are cooked for about 20-25 minutes on the stove, then drain and let cool.
  2. In a large mixing bowl, combine the cooked lentils, breadcrumbs, nutritional yeast, chopped onion, and minced garlic.
  3. Stir in the soy sauce, smoked paprika, salt, and pepper to your mixture, creating a sticky dough-like consistency.
  4. Form small sausage shapes, about two inches long, from the mixture.
  5. In a skillet over medium heat, pour enough vegetable oil to cover the bottom of the pan and wait until shimmering.
  6. Carefully add the sausages, cooking for about 3-4 minutes on each side until golden brown and crispy.
  7. Transfer the cooked sausages to a paper towel-lined plate to absorb excess oil.
  8. Serve the Vegan Cocktail Sausages on a platter and enjoy!

Notes

For different textures, chickpeas can be used instead of lentils. Avoid overcrowding the pan to ensure they fry properly.
