- Make sure your lentils are cooked for about 20-25 minutes on the stove, then drain and let cool.
- In a large mixing bowl, combine the cooked lentils, breadcrumbs, nutritional yeast, chopped onion, and minced garlic.
- Stir in the soy sauce, smoked paprika, salt, and pepper to your mixture, creating a sticky dough-like consistency.
- Form small sausage shapes, about two inches long, from the mixture.
- In a skillet over medium heat, pour enough vegetable oil to cover the bottom of the pan and wait until shimmering.
- Carefully add the sausages, cooking for about 3-4 minutes on each side until golden brown and crispy.
- Transfer the cooked sausages to a paper towel-lined plate to absorb excess oil.
- Serve the Vegan Cocktail Sausages on a platter and enjoy!
Notes
For different textures, chickpeas can be used instead of lentils. Avoid overcrowding the pan to ensure they fry properly.
