Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and combine.
- In a separate bowl, sift together flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips and dried cherries until evenly distributed.
Baking
- Scoop tablespoon-sized portions of cookie dough onto a parchment-lined baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, until edges are firm but centers are slightly underbaked.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, use coconut oil instead of butter. Chill the dough for an hour for even chewier cookies. Store in an airtight container at room temperature for 5 days or freeze for longer preservation.
