  • 1 cup unsalted butter, softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-Ins
  • 1 cup chocolate chips
  • 1 cup dried cherries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and combine.
  4. In a separate bowl, sift together flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips and dried cherries until evenly distributed.
Baking
  1. Scoop tablespoon-sized portions of cookie dough onto a parchment-lined baking sheet, leaving space between each cookie.
  2. Bake for 10-12 minutes, until edges are firm but centers are slightly underbaked.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a healthier option, use coconut oil instead of butter. Chill the dough for an hour for even chewier cookies. Store in an airtight container at room temperature for 5 days or freeze for longer preservation.
