  • 2 cups tomatoes, diced
  • 2 cups cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash your tomatoes and cucumbers thoroughly. Dice them into bite-sized pieces.
  2. Finely dice the red onion and chop the fresh parsley. Add them to a large mixing bowl with the diced tomatoes and cucumbers.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss gently until everything is well-coated. Adjust seasoning if necessary.
  5. Serve immediately for the best texture and flavor.

Notes

For a twist, substitute parsley with mint or basil. Prep the vegetables ahead but keep the dressing separate to maintain freshness.
