Ingredients
  

For the Tomato Butter
  • 1 cup ripe tomatoes, diced
  • 2 tablespoons unsalted butter (or a Halal-friendly alternative)
  • Salt and pepper to taste
For the Additional Toppings
  • 8 ounces fresh burrata cheese
  • 4 slices sourdough or baguette bread
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish (optional)

Method
 

Preparation
  1. Start by roasting the diced tomatoes on a baking sheet at 400°F (200°C) for about 15-20 minutes until they’re soft and caramelized. In a bowl, mash the roasted tomatoes with butter, salt, and pepper until you achieve a smooth consistency.
Toasting the Bread
  1. While the tomatoes are roasting, heat a skillet over medium heat and add the olive oil. Toast your bread slices in the skillet for about 2-3 minutes on each side or until golden and crispy.
Assembling the Toast
  1. Spread a generous layer of the tomato butter on each piece of toasted bread. Tear the burrata into large pieces and place on top.
Garnishing
  1. Drizzle with a little more olive oil, sprinkle with salt and freshly cracked pepper, and finish with a basil leaf on each piece.
Serving
  1. Enjoy immediately while the toast is warm and crispy!

Notes

Substitutions: If you can’t find burrata, feel free to use fresh mozzarella or even whipped cream cheese for a creamy texture. Make sure to let the tomatoes roast sufficiently for that caramelized flavor.
