Preparation
- Preheat your oven to 350°F (175°C).
- Rinse the fresh blueberries under cool water and drain them well. Toss with a tablespoon of sugar and let sit for a few minutes.
- In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well.
- Pour in the milk and melted butter, then add the vanilla extract. Stir until just combined; do not over-mix.
- Grease a baking dish with butter or oil. Pour the batter into the dish, then scatter the blueberries on top without stirring.
Baking
- Place the baking dish in the oven and bake for about 30-35 minutes, or until the topping is golden brown and a toothpick comes out clean.
- Allow the cobbler to cool for a few minutes before serving.
Notes
Serve warm with vanilla ice cream or whipped cream for extra delight. Fresh blueberries are recommended, but frozen can be used if necessary. Proper storage: Refrigerate in an airtight container for up to 3 days or freeze for up to 3 months.
