Cobbler Ingredients
  • 2 cups fresh blueberries Can be substituted with frozen blueberries, slightly thawed and drained.
  • 1 cup all-purpose flour
  • 1 cup sugar Reduce by 1/4 cup for less sweetness.
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Rinse the fresh blueberries under cool water and drain them well. Toss with a tablespoon of sugar and let sit for a few minutes.
  3. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well.
  4. Pour in the milk and melted butter, then add the vanilla extract. Stir until just combined; do not over-mix.
  5. Grease a baking dish with butter or oil. Pour the batter into the dish, then scatter the blueberries on top without stirring.
Baking
  1. Place the baking dish in the oven and bake for about 30-35 minutes, or until the topping is golden brown and a toothpick comes out clean.
  2. Allow the cobbler to cool for a few minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for extra delight. Fresh blueberries are recommended, but frozen can be used if necessary. Proper storage: Refrigerate in an airtight container for up to 3 days or freeze for up to 3 months.
