Preparation
  1. Begin by shredding the cabbage. You can use a sharp knife or a box grater for this. Aim for thin strips to ensure they cook well.
  2. In a large mixing bowl, combine the shredded cabbage, flour, optional cheese, eggs, milk, baking powder, salt, and black pepper. Stir until all the ingredients are well incorporated. The mixture should be thick but spreadable.
Cooking Method
  1. For Fried Fritters: Heat a generous amount of oil in a large skillet over medium heat. Once hot, drop spoonfuls of the cabbage mixture into the oil, flattening them slightly with the back of a spatula. Fry for 3-4 minutes on each side until they turn golden brown and crispy. Place on a paper towel to drain excess oil.
  2. For Baked Fritters: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Spoon the cabbage mixture onto the sheet, forming patties. Bake for about 15-20 minutes, flipping halfway, until they are golden and cooked through.

Notes
