- In a bowl, combine cottage cheese, eggs, oats, vanilla extract, and baking powder. Whisk them thoroughly until well combined.
- Heat a non-stick skillet over medium heat and add a little butter or oil to coat the surface.
- Once the skillet is hot, pour the pancake batter into the pan in a circular shape, about the size of your palm.
- Cook for about 2-3 minutes or until you see bubbles forming on the top.
- Gently flip the pancake using a spatula and cook for another 2 minutes on the other side, ensuring it is cooked through and golden brown.
- Transfer the pancake to a plate, and enjoy it warm with your favorite toppings!
