- Boil a large pot of salted water and add the spaghetti. Cook according to package instructions, about 8-10 minutes, stirring occasionally.
- While the pasta cooks, heat a pan over medium heat. Add the ground beef and cook until browned, breaking apart with a spatula. Drain excess fat.
- Stir in the taco seasoning, diced tomatoes (with juices), and bell peppers. Simmer for about 5 minutes.
- Drain the spaghetti and add it to the beef mixture, tossing everything gently until coated.
- Reduce heat to low, sprinkle shredded cheese on top, and cover the pan until cheese melts.
- Serve topped with sour cream and chopped green onions.
Notes
Substitutions available for ground beef. Store leftovers in an airtight container for up to 3 days. Freeze portions without toppings for longer storage. Reheat gently to maintain texture.
