  • 8 oz spaghetti Use your preferred pasta type.
  • 1 lb ground beef Can substitute with ground chicken or turkey.
  • 1 packet taco seasoning Adjust based on taste preferences.
  • 1 can diced tomatoes Include juices for extra flavor.
  • 1 cup diced bell peppers Any color bell pepper works.
  • 1 cup shredded cheese Cheddar or Mexican blend recommended.
  • 1/2 cup sour cream For serving.
  • to taste Salt and pepper
  • for garnish Chopped green onions

Method
 

Preparation
  1. Boil a large pot of salted water and add the spaghetti. Cook according to package instructions, about 8-10 minutes, stirring occasionally.
  2. While the pasta cooks, heat a pan over medium heat. Add the ground beef and cook until browned, breaking apart with a spatula. Drain excess fat.
  3. Stir in the taco seasoning, diced tomatoes (with juices), and bell peppers. Simmer for about 5 minutes.
  4. Drain the spaghetti and add it to the beef mixture, tossing everything gently until coated.
  5. Reduce heat to low, sprinkle shredded cheese on top, and cover the pan until cheese melts.
  6. Serve topped with sour cream and chopped green onions.

Notes

Substitutions available for ground beef. Store leftovers in an airtight container for up to 3 days. Freeze portions without toppings for longer storage. Reheat gently to maintain texture.
