Ingredients
  

For the marinade
  • 1/4 cup Soy sauce Use Tamari for a gluten-free version.
  • 1/4 cup Mirin (non-alcoholic)
  • 1 tbsp Sake (non-alcoholic substitute)
  • 2 tbsp Sugar
Main ingredients
  • 2 lbs Chicken thighs or breasts, cut into bite-sized pieces
  • 3 units Green onions, chopped For garnish.
  • 1 tbsp Sesame seeds For garnish.
  • 2 tbsp Vegetable oil for grilling

Method
 

Preparation
  1. In a mixing bowl, whisk together the soy sauce, mirin, sake, and sugar until well combined.
  2. Add the chicken pieces to the marinade, making sure they are evenly coated. Cover and refrigerate for at least 15 minutes, or longer if possible.
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.
  4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
Cooking
  1. Preheat your grill or grill pan on medium-high heat. Once hot, drizzle with vegetable oil to prevent sticking.
  2. Place the skewers on the grill and cook for 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  3. Remove from the grill and top with chopped green onions and sesame seeds.
  4. Enjoy your Sweet & Savory Chicken Yakitori hot off the grill.

Notes

For gluten-free option, use Tamari instead of soy sauce. To prevent dry chicken, do not skip the marinating step.
