  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup berry-flavored gelatin
Topping
  • 1 cup whipped topping
  • to taste additional berries for garnish Any fresh berries of choice

Method

Preparation
  1. Preheat your oven according to the cake mix instructions. Prepare a 9×13-inch baking dish by greasing it lightly.
  2. Mix the vanilla cake batter by following the instructions on the cake mix box, incorporating the eggs, water, and oil as directed.
Baking the Cake
  1. Pour the batter into the greased baking dish and bake according to the package directions (usually around 25-30 minutes or until a toothpick inserted comes out clean).
Poke the Cake
  1. Once the cake has cooled slightly (about 10 minutes), use a fork to poke holes all over the surface, about 1 inch apart.
Prepare the Gelatin
  1. In a separate bowl, dissolve the berry-flavored gelatin in boiling water as per the package instructions. Stir until fully combined.
  2. Gently pour the gelatin mixture over the poked cake, ensuring it seeps into the holes.
Cooling and Topping
  1. Allow the cake to cool to room temperature. Once cooled, refrigerate the cake for at least 2 hours, allowing the flavors to meld.
  2. After chilling, spread the whipped topping evenly over the cake and garnish with additional fresh berries.
Serving
  1. Slice up this fruity delight and share with family and friends!

Notes

To keep the cake fresh, store it in the refrigerator for up to 4-5 days. You can serve it chilled for the best flavor.
