Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 1/2 cups white sugar For dough mixture.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract Can be substituted with lemon or orange zest.
  • 3/4 cup white sugar (for decoration) Sprinkle on top of cookies.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine all-purpose flour, baking soda, and baking powder.
  3. In a separate large bowl, cream the softened unsalted butter and 1 1/2 cups of white sugar together until smooth and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined.
  6. Using a cookie scoop or tablespoon, place balls of dough onto an ungreased cookie sheet, leaving space for spreading.
  7. Sprinkle the tops of the cookies with the remaining 3/4 cup of white sugar.
  8. Bake for 8-10 minutes, or until lightly golden around the edges.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze them for up to three months, and reheat in the microwave or oven.
