Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine all-purpose flour, baking soda, and baking powder.
- In a separate large bowl, cream the softened unsalted butter and 1 1/2 cups of white sugar together until smooth and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined.
- Using a cookie scoop or tablespoon, place balls of dough onto an ungreased cookie sheet, leaving space for spreading.
- Sprinkle the tops of the cookies with the remaining 3/4 cup of white sugar.
- Bake for 8-10 minutes, or until lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze them for up to three months, and reheat in the microwave or oven.
