Method
Preparation of Shells
- Sift together almond flour and powdered sugar in a large bowl.
- Beat egg whites and granulated sugar until stiff peaks form.
- Gently fold dry ingredients into the egg whites in three additions.
Add Color and Flavor
- If using, add a few drops of pink food coloring and fold in vanilla extract.
Piping the Macarons
- Transfer macaron batter into a piping bag fitted with a round tip.
- Pipe small circles onto a baking sheet lined with parchment paper, spacing them appropriately.
- Let them sit for about 30-60 minutes to form a skin.
Baking
- Preheat oven to 150°C (300°F).
- Bake macarons for 15-18 minutes until firm to the touch.
Preparing the Filling
- Whip cream cheese with strawberry puree and a sprinkle of sugar until smooth.
Assembly
- Once the macaron shells are cooled, pair them up.
- Pipe the cream cheese filling onto the bottom of one shell and sandwich with another.
