Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
Wet Ingredients
  • 1 cup sugar
  • 1/2 cup vegetable oil Can substitute with coconut oil for flavor
  • 1 teaspoon vanilla extract
  • 2 large eggs
Coating
  • 1 cup powdered sugar For dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking sheet.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  3. In another bowl, mix the sugar and vegetable oil until creamy. Add eggs one at a time, then stir in the vanilla extract.
  4. Gradually combine the dry ingredients into the wet mixture, stirring just until fully incorporated.
  5. Using a tablespoon, scoop out the cookie dough and roll it into balls; then roll each ball in powdered sugar to coat.
Baking
  1. Place the cookies on the greased baking sheet, leaving space between them.
  2. Bake for 10-12 minutes, or until the tops have crinkled.
  3. Allow cookies to cool on the baking sheet for five minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week, or freeze separated by parchment paper for later enjoyment.
