Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
Main Ingredients
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup chopped walnuts (optional)

  • Cream cheese frosting For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk gently until well combined.
  3. In another bowl, whisk together the sugars, oil, and eggs until smooth and creamy.
  4. Gradually fold the dry mixture into the wet ingredients, combining gently to avoid overmixing.
  5. Stir in the grated carrots, crushed pineapple, and walnuts (if using) until evenly distributed.
Baking
  1. Pour the batter into the prepared baking dish, smoothing the top with a spatula.
  2. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
Frosting
  1. Once cooled, frost with cream cheese frosting and cut into bars.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months. Thaw in the refrigerator overnight before serving.
