  • 8 large large eggs Fresh eggs are preferred.
  • 2 cups fresh spinach, chopped You can use kale as a substitute.
  • 1 cup feta cheese, crumbled Substitute with goat cheese or cottage cheese if desired.
  • 1 cup cherry tomatoes, halved Any variety of cherry tomatoes will work.

  • 1 ripe avocado, sliced Optional garnishing.
  • 1 baguette baguette, sliced Freshly baked baguette is ideal.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a medium-sized baking dish with oil or butter to prevent sticking.
  3. In a large bowl, whisk together the eggs until fully blended. Add the chopped spinach, crumbled feta, and halved cherry tomatoes. Stir until combined.
  4. Pour the egg mixture into the prepared baking dish, spreading it evenly.
  5. Place the dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and lightly golden on top.
  6. Once baked, remove from the oven and let it cool for a few minutes. Top with sliced avocado for added creaminess.
  7. Serve alongside slices of baguette and fresh fruit.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze individual portions for about a month. Reheat in the microwave or oven.
