Preparation
- Preheat the oven to 350°F (175°C).
- Lightly grease a medium-sized baking dish with oil or butter to prevent sticking.
- In a large bowl, whisk together the eggs until fully blended. Add the chopped spinach, crumbled feta, and halved cherry tomatoes. Stir until combined.
- Pour the egg mixture into the prepared baking dish, spreading it evenly.
- Place the dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and lightly golden on top.
- Once baked, remove from the oven and let it cool for a few minutes. Top with sliced avocado for added creaminess.
- Serve alongside slices of baguette and fresh fruit.
Notes
Store leftovers in the refrigerator for up to 3 days or freeze individual portions for about a month. Reheat in the microwave or oven.
