  • 1 cup unsalted butter, softened Should be softened to avoid lumps.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Decoration
  • to taste Colored sugar or sprinkles For decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 to 5 minutes.
  3. Crack in the egg and add the vanilla extract, then mix until well combined.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients, mixing until just combined.
  5. Use a tablespoon or cookie scoop to portion out dough onto ungreased baking sheets, leaving space between each.
  6. Sprinkle colored sugar or sprinkles on top of each cookie before baking.
  7. Bake for 10 to 12 minutes or until edges are lightly golden. The centers should look slightly underbaked.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To make cookies vegan, substitute plant-based butter. Watch cookies closely while baking to avoid over-baking. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
