Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 to 5 minutes.
- Crack in the egg and add the vanilla extract, then mix until well combined.
- In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients, mixing until just combined.
- Use a tablespoon or cookie scoop to portion out dough onto ungreased baking sheets, leaving space between each.
- Sprinkle colored sugar or sprinkles on top of each cookie before baking.
- Bake for 10 to 12 minutes or until edges are lightly golden. The centers should look slightly underbaked.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
To make cookies vegan, substitute plant-based butter. Watch cookies closely while baking to avoid over-baking. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
