Ingredients
  

Main Ingredients
  • 1 cup rice Use long grain or basmati for best results.
  • 2 cups spinach, chopped You can substitute with other leafy greens.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil Extra virgin olive oil is preferred.
  • 2 cups vegetable broth or water Use broth for more flavor.
  • Salt and pepper to taste

Method
 

Cooking Instructions
  1. In a medium-sized pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add the chopped onion and sauté until it’s translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in 1 cup of rice and toast for about 2-3 minutes.
  5. Pour in 2 cups of vegetable broth or water, add a pinch of salt and pepper, and bring to a boil.
  6. Once boiling, reduce heat to low and stir in the chopped spinach. Cover and simmer for 15-20 minutes.
  7. Remove from heat and let it sit for 5 minutes, then fluff gently with a fork before serving.

Notes

Substitutions: Swap spinach for kale, Swiss chard, or stir in frozen peas. Timing: Add spinach towards the end to preserve its color. Ensure the proper liquid-to-rice ratio to avoid mushiness.
