- In a medium-sized pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and sauté until it’s translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in 1 cup of rice and toast for about 2-3 minutes.
- Pour in 2 cups of vegetable broth or water, add a pinch of salt and pepper, and bring to a boil.
- Once boiling, reduce heat to low and stir in the chopped spinach. Cover and simmer for 15-20 minutes.
- Remove from heat and let it sit for 5 minutes, then fluff gently with a fork before serving.
Notes
Substitutions: Swap spinach for kale, Swiss chard, or stir in frozen peas. Timing: Add spinach towards the end to preserve its color. Ensure the proper liquid-to-rice ratio to avoid mushiness.
