  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 tablespoon honey
  • 1 medium bell pepper, sliced
  • 2 stalks green onions, chopped

Method
 

Preparation
  1. Start by cutting your chicken breast into bite-sized pieces.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced ginger and garlic to the hot oil. Sauté for about 30 seconds, or until fragrant—be careful not to burn them!
  4. Toss in the chicken pieces, season with salt and pepper, and cook for about 5-7 minutes or until the chicken is browned and cooked through.
  5. In a small bowl, mix the soy sauce, chili paste, and honey together. Pour this mixture into the skillet and stir well to coat the chicken.
  6. Add sliced bell pepper and cook for an additional 3-4 minutes until the peppers are tender yet still crisp.
  7. Stir in the chopped green onions and give a quick stir before removing from heat.
  8. Plate your Spicy Dragon Chicken hot and enjoy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in a skillet over low heat with a splash of water for moisture.
