  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup butter, softened Ensure butter is at room temperature.
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed coffee, cooled Use your favorite brewing method.
  • 1/2 cup chocolate chips (optional) Adds an extra level of decadence.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Whisk together.
  3. In a large bowl, beat the softened butter with the brown and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and cooled brewed coffee until fully incorporated.
  5. Gradually stir the dry ingredients into the wet mixture until just combined.
  6. If using, gently fold in the chocolate chips.
Baking
  1. Using a cookie scoop or tablespoon, drop rounded cookies onto a lined baking sheet.
  2. Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week or freeze for up to three months. Let thaw before serving.
