Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Whisk together.
- In a large bowl, beat the softened butter with the brown and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and cooled brewed coffee until fully incorporated.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- If using, gently fold in the chocolate chips.
Baking
- Using a cookie scoop or tablespoon, drop rounded cookies onto a lined baking sheet.
- Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to one week or freeze for up to three months. Let thaw before serving.
