Preparation
- Start by greasing a 9x9-inch baking pan lightly with butter or non-stick spray.
- In a large saucepan over medium heat, melt the butter, stirring occasionally until completely melted.
- Once the butter is melted, add the mini marshmallows and stir constantly until completely melted and smooth (about 3-5 minutes).
- If using, add vanilla extract to the melted marshmallow mixture and stir well to combine.
- Add the colorful cereal to the marshmallow mix and stir until all the cereal is evenly coated, being gentle to avoid crushing the cereal.
- Pour the mixture into the prepared baking pan and press down evenly with a spatula. Optionally, sprinkle some sprinkles on top.
- Allow the treats to cool at room temperature for about 30 minutes or until set.
- Once set, cut into squares or bars and serve, or store in an airtight container.
Notes
For a nut-free version, use sunflower butter instead of traditional butter. Store leftovers in an airtight container at room temperature for up to one week or freeze for up to three months. Reheat in the microwave for 10-15 seconds if desired.
