  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract until smooth.
  5. Gradually blend the dry ingredients into the wet mixture until a soft dough forms.
Baking
  1. Scoop rounded balls of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, until the edges are set.
Glazing
  1. Prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  2. Once the cookies have cooled, drizzle the glaze over them.
