  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Stir until smooth and creamy.
  3. Scoop out portions of dough and roll them into balls. Place them on a parchment-lined baking sheet with space between each.
Baking
  1. Bake the cookies for 10-12 minutes, until the edges are lightly golden and the centers look slightly underbaked.
  2. Immediately press a chocolate kiss into the center of each cookie after removing from the oven.
  3. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

For a nut-free option, use sunflower seed butter. Watch the baking time closely to avoid dry cookies. Experiment by adding crushed nuts or chocolate chips for extra flavor. Store in an airtight container for up to a week or freeze for three months.
