Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-5 minutes.
- Beat in the egg, lemon juice, and lemon zest until fully combined.
Mixing
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, mixing just until combined. Do not overmix!
Baking
- Use a cookie scoop or tablespoon to portion out the dough onto a parchment-lined baking sheet, leaving enough space between cookies.
- Bake in preheated oven for 10-12 minutes, until the edges are set but the centers are still slightly soft.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 3 months. To reheat, pop in the microwave for a few seconds or warm in a preheated oven at 300°F for about 5 minutes.
