  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest Don't skip for better flavor
  • 2 1/2 cups all-purpose flour Can substitute with gluten-free flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the egg, lemon juice, and lemon zest until fully combined.
Mixing
  1. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  2. Gradually add the dry ingredients into the wet mixture, mixing just until combined. Do not overmix!
Baking
  1. Use a cookie scoop or tablespoon to portion out the dough onto a parchment-lined baking sheet, leaving enough space between cookies.
  2. Bake in preheated oven for 10-12 minutes, until the edges are set but the centers are still slightly soft.
  3. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 3 months. To reheat, pop in the microwave for a few seconds or warm in a preheated oven at 300°F for about 5 minutes.
