Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the unsalted butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, followed by the vanilla extract. Mix until well combined.
  4. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients. Mix until just combined; don't overmix.
  5. Gently fold in the chocolate chips into the cookie dough.
  6. Using a cookie scoop or tablespoon, drop the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, until the edges are set but the center is still soft.
  2. Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

For even softer cookies, chill cookie dough for about 30 minutes before baking. Use quality chocolate chips for better flavor.
