  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 cup chopped apples or other fruit (optional) Pears, peaches, or berries can be used for variety.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish or cobbler pan with butter.
  3. In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well blended.
  4. In another bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract, until smooth.
  6. Gradually stir in the dry ingredients, alternating with the milk, until just combined. Gently fold in the chopped fruit if desired.
  7. Sprinkle the ground cinnamon throughout the mixture.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Serving
  1. Allow the cobbler to cool for a few minutes before serving. Enjoy warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat individual portions in the microwave or oven until heated through. For dairy-free options, substitute dairy-free butter and milk alternatives.
