Preparation
- Start by seasoning the chicken thighs generously with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down, and sear for about 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes, then remove the thighs and set them aside.
- In the same skillet, reduce the heat to medium and add your chopped onion and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and aromatic.
- Pour in the chicken broth, scraping up any browned bits at the bottom of the skillet. Bring it to a gentle simmer, then gradually stir in the heavy cream. Season with salt and pepper to taste.
- Return the seared chicken thighs to the skillet, spooning some sauce over them. Cover and let simmer on low for 20-30 minutes, until the chicken is cooked through and tender.
- Once cooked, garnish your Smothered Chicken with fresh parsley for a pop of color and serve warm with your favorite sides.
Notes
Substitutions: You can easily swap chicken thighs for chicken breasts or bone-in cuts. Timing: Ensure to monitor the heat while the chicken is simmering to avoid boiling. If your sauce becomes too thick, stir in a little more chicken broth or cream.
