  • 4 pieces chicken thighs Halal-certified if needed.
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Method
 

Preparation
  1. Start by seasoning the chicken thighs generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down, and sear for about 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes, then remove the thighs and set them aside.
  3. In the same skillet, reduce the heat to medium and add your chopped onion and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and aromatic.
  4. Pour in the chicken broth, scraping up any browned bits at the bottom of the skillet. Bring it to a gentle simmer, then gradually stir in the heavy cream. Season with salt and pepper to taste.
  5. Return the seared chicken thighs to the skillet, spooning some sauce over them. Cover and let simmer on low for 20-30 minutes, until the chicken is cooked through and tender.
  6. Once cooked, garnish your Smothered Chicken with fresh parsley for a pop of color and serve warm with your favorite sides.

Notes

Substitutions: You can easily swap chicken thighs for chicken breasts or bone-in cuts. Timing: Ensure to monitor the heat while the chicken is simmering to avoid boiling. If your sauce becomes too thick, stir in a little more chicken broth or cream.
