Ingredients
  

Brownie Base
  • 1/2 cup unsalted butter Melted
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chocolate chips (optional) For extra chocolatey goodness

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt the 1/2 cup of unsalted butter. Be careful not to overheat!
  3. Add the granulated sugar and brown sugar to the melted butter and stir until well-combined and creamy.
  4. Mix in the 1 teaspoon of vanilla extract and then add the 2 large eggs one at a time, stirring well after each addition.
  5. In a separate bowl, whisk together the 1/2 cup all-purpose flour, 1/3 cup unsweetened cocoa powder, 1/4 teaspoon salt, and 1/4 teaspoon baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.
  7. Fold in the 1/2 cup of chocolate chips, if using.
  8. Pour the batter into a greased or lined 8x8-inch baking dish, smoothing the top.
Baking
  1. Bake in the preheated oven for 20-25 minutes. Use a toothpick to check; it should come out with a few moist crumbs.
  2. Allow the brownies to cool in the pan for about 10-15 minutes before slicing into squares.

Notes

These brownies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to three days. They can also be frozen for up to three months.
