- Start by gathering all your ingredients. Rinse the cherry tomatoes and slice the Kalamata olives. Mince the garlic and crumble the feta cheese.
Layering Ingredients
- Place the chicken breasts at the bottom of the slow cooker, ensuring they are spread out evenly.
- On top of the chicken, layer the cherry tomatoes, sliced olives, and minced garlic.
Mixing the Dressing
- In a separate bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
- Pour this mixture over the chicken and vegetables in the slow cooker.
Cooking
- Cover the slow cooker and cook on high for 4 to 5 hours or on low for 6 to 7 hours. The chicken should be tender and cooked through.
Finishing Touches
- About 15 minutes before serving, sprinkle the crumbled feta cheese over the chicken and allow it to warm slightly.
- Once done, garnish with fresh parsley and serve warm.
