  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano

Method
 

Preparation
  1. Start by gathering all your ingredients. Rinse the cherry tomatoes and slice the Kalamata olives. Mince the garlic and crumble the feta cheese.
Layering Ingredients
  1. Place the chicken breasts at the bottom of the slow cooker, ensuring they are spread out evenly.
  2. On top of the chicken, layer the cherry tomatoes, sliced olives, and minced garlic.
Mixing the Dressing
  1. In a separate bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
  2. Pour this mixture over the chicken and vegetables in the slow cooker.
Cooking
  1. Cover the slow cooker and cook on high for 4 to 5 hours or on low for 6 to 7 hours. The chicken should be tender and cooked through.
Finishing Touches
  1. About 15 minutes before serving, sprinkle the crumbled feta cheese over the chicken and allow it to warm slightly.
  2. Once done, garnish with fresh parsley and serve warm.

Notes

Store in the refrigerator for up to 3-4 days or freeze for up to 4 months. Can be reheated in the microwave or on stove. The flavors improve overnight!
