- Pat the chicken thighs dry with paper towels and season them with salt, pepper, and jerk seasoning, ensuring they’re evenly coated for the best flavor.
- In the bottom of your slow cooker, place the sliced onion, minced garlic, and sliced bell pepper. These will infuse your chicken with moisture and flavor as it cooks.
- Place the seasoned chicken thighs on top of the vegetables, then pour the chicken broth around (not over) the chicken to keep the seasoning intact.
- Cover your slow cooker and set it to low for 6-8 hours or high for 3-4 hours. This slow cooking will break down the chicken, making it juicy and tender.
- Once cooked, shred the chicken gently with two forks, mixing it with the veggies and sauce in the slow cooker. For added flavor, adjust seasoning if needed and garnish with fresh herbs.
Notes
For substitutions, create your own jerk seasoning blend using paprika, cayenne pepper, thyme, allspice, and ginger. Store leftovers in airtight containers for up to 4 days in the refrigerator or freeze for up to 3 months.
