Preparation
- Start by placing the boneless, skinless chicken breasts at the bottom of the slow cooker. Season lightly with salt and pepper.
Making the Sauce
- In a separate bowl, mix together the softened cream cheese, chicken broth, minced garlic, Italian seasoning, and the sun-dried tomatoes (with oil). Stir until everything is combined into a smooth sauce.
Cooking
- Pour the creamy sauce over the chicken in the slow cooker. Make sure the chicken is well-coated with the sauce.
- Cover and cook on low for about 4-6 hours or high for 2-3 hours, or until the chicken reaches an internal temperature of 165°F.
Serving
- Once cooked, shred the chicken with two forks right in the slow cooker or serve it whole. Drizzle some of that delicious sauce over your preferred side – rice, pasta, or even a side of veggies!
Notes
For meal prep, store in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 3 months. To reheat, microwave or warm on the stove, adding a splash of chicken broth or water if the sauce thickens.
