  • 4 pieces boneless, skinless chicken breasts Ensure the chicken is Halal-certified.
  • 1 cup sun-dried tomatoes (preferably oil-packed for extra flavor)
  • 8 oz cream cheese, softened Can substitute with Greek yogurt for a lighter option.
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Start by placing the boneless, skinless chicken breasts at the bottom of the slow cooker. Season lightly with salt and pepper.
Making the Sauce
  1. In a separate bowl, mix together the softened cream cheese, chicken broth, minced garlic, Italian seasoning, and the sun-dried tomatoes (with oil). Stir until everything is combined into a smooth sauce.
Cooking
  1. Pour the creamy sauce over the chicken in the slow cooker. Make sure the chicken is well-coated with the sauce.
  2. Cover and cook on low for about 4-6 hours or high for 2-3 hours, or until the chicken reaches an internal temperature of 165°F.
Serving
  1. Once cooked, shred the chicken with two forks right in the slow cooker or serve it whole. Drizzle some of that delicious sauce over your preferred side – rice, pasta, or even a side of veggies!

Notes

For meal prep, store in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 3 months. To reheat, microwave or warm on the stove, adding a splash of chicken broth or water if the sauce thickens.
