- Begin by placing the quartered onions at the bottom of your slow cooker.
- Rinse the corned beef brisket under cold water to remove excess brine and place it on top of the onions.
- Scatter the carrots and potatoes around the brisket.
- Pour in the 4 cups of water.
- Sprinkle the mustard seeds, coriander, and bay leaves over the meat and vegetables.
Cooking
- Cover with the lid and cook on low for 8-10 hours or on high for 4-6 hours.
- Once finished, remove the corned beef from the slow cooker and let it rest for about 10 minutes before slicing against the grain.

- Serve it with the vegetables and your choice of toppings like mustard or pickles.
