  • 2.5 to 3 pounds corned beef brisket
  • 4 cups water
  • 2 medium onions, quartered
  • 4 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, quartered
Spices
  • 1 tablespoon mustard seeds
  • 1 tablespoon coriander
  • 2-3 pieces bay leaves

Method
 

Preparation
  1. Begin by placing the quartered onions at the bottom of your slow cooker.
  2. Rinse the corned beef brisket under cold water to remove excess brine and place it on top of the onions.
  3. Scatter the carrots and potatoes around the brisket.
  4. Pour in the 4 cups of water.
  5. Sprinkle the mustard seeds, coriander, and bay leaves over the meat and vegetables.
Cooking
  1. Cover with the lid and cook on low for 8-10 hours or on high for 4-6 hours.
  2. Once finished, remove the corned beef from the slow cooker and let it rest for about 10 minutes before slicing against the grain.
Serving
  1. Serve it with the vegetables and your choice of toppings like mustard or pickles.

For alternative options, choose a Halal-certified beef brisket. Allowing the meat to rest ensures optimal juiciness. Store leftovers in airtight containers.
