  • 1 pound fresh scallops Opt for large sea scallops for best results.
  • 4 tablespoons unsalted butter, melted
  • 1 cup breadcrumbs Panko breadcrumbs can be used for a crunchier texture.
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice For extra zest.
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse fresh scallops under cold water and pat dry with a paper towel.
  3. In a bowl, combine melted butter, breadcrumbs, minced garlic, salt, and pepper. Mix well until breadcrumbs are coated.
  4. Place the scallops in a single layer in a baking dish. Squeeze fresh lemon juice over them.
  5. Sprinkle the breadcrumb mixture generously over each scallop.
Baking
  1. Bake in the preheated oven for about 15-20 minutes, or until topping is golden brown and scallops are cooked through.
Serving
  1. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. They can also be frozen for about a month. Reheat in the oven at 350°F (175°C) for 10 minutes.
