Preparation
- Begin by bringing a pot of water to a boil. Add the peeled and deveined shrimp to the water, cooking for about 2-3 minutes or until they turn pink and opaque. Drain and set aside.
- Follow the instructions on the package to cook the vermicelli noodles. Once cooked, drain and set aside.
- Slice the bell peppers into thin strips. Make sure your lettuce is shredded and your herbs are prepared (mint and cilantro).
- Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it’s softened, but not entirely mushy.
Assembly
- Place the softened wrapper on a clean surface. Layer with a small handful of lettuce, a few shrimp, a small portion of vermicelli noodles, bell pepper strips, and a sprinkle of mint and cilantro.
- Roll the wrapper tightly, folding in the edges as you go. Make sure it’s neatly packed so nothing spills out. Repeat this process for the remaining wrappers.
Serving
- Arrange your rolls on a platter with your dipping sauce in the middle. Enjoy with family and friends!
Notes
