Ingredients
  

For the Spring Rolls
  • 8 pieces rice paper wrappers
  • 1 pound shrimp, peeled and deveined Ensure they are fresh or frozen and halal-certified.
  • 1 cup shredded lettuce Freshness is key.
  • 1 cup vermicelli noodles, cooked Check for halal brands.
  • 1/2 cup fresh mint leaves Always opt for fresh herbs.
  • 1/2 cup fresh cilantro leaves Always opt for fresh herbs.
  • 1/2 cup sliced bell peppers Cut into thin strips.
  • 1/4 cup creamy peanut or hoisin dipping sauce Ensure it’s halal-friendly.

Method
 

Preparation
  1. Begin by bringing a pot of water to a boil. Add the peeled and deveined shrimp to the water, cooking for about 2-3 minutes or until they turn pink and opaque. Drain and set aside.
  2. Follow the instructions on the package to cook the vermicelli noodles. Once cooked, drain and set aside.
  3. Slice the bell peppers into thin strips. Make sure your lettuce is shredded and your herbs are prepared (mint and cilantro).
  4. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it’s softened, but not entirely mushy.
Assembly
  1. Place the softened wrapper on a clean surface. Layer with a small handful of lettuce, a few shrimp, a small portion of vermicelli noodles, bell pepper strips, and a sprinkle of mint and cilantro.
  2. Roll the wrapper tightly, folding in the edges as you go. Make sure it’s neatly packed so nothing spills out. Repeat this process for the remaining wrappers.
Serving
  1. Arrange your rolls on a platter with your dipping sauce in the middle. Enjoy with family and friends!

Notes

Freshness is key for flavor. Avoid overfilling to prevent tearing. Store leftovers in an airtight container in the fridge for up to 2 days. Best enjoyed fresh!
