  • 8 oz noodles (rice noodles or your choice) Use any type of noodles you prefer.
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce Use gluten-free soy sauce if needed.
  • 1 tsp ginger (grated)
  • 2 cloves garlic (minced)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup Substitute based on preference.
  • 1 cup vegetables (e.g., bell peppers, carrots, broccoli) Use a mix of your favorite crunchy vegetables.
  • 2 green onions (sliced) For garnish.
  • Sesame seeds (for garnish)

Method
 

Preparation
  1. Bring a pot of salted water to a boil. Add your choice of noodles and cook according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together the sesame oil, soy sauce, grated ginger, minced garlic, rice vinegar, and honey or maple syrup to create the sauce.
  3. In a large skillet or wok, heat a little more sesame oil over medium heat. Add the vegetables and stir-fry until they are tender-crisp, about 3-4 minutes.
  4. Toss the cooked noodles into the skillet with the sautéed vegetables. Pour the sauce over the top and mix everything together until the noodles are evenly coated and warm.
  5. Garnish with sliced green onions and sesame seeds on top. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month. Reheat with a splash of water or extra sauce.
