Preparation
- Bring a pot of salted water to a boil. Add your choice of noodles and cook according to package instructions. Drain and set aside.
- In a small bowl, whisk together the sesame oil, soy sauce, grated ginger, minced garlic, rice vinegar, and honey or maple syrup to create the sauce.
- In a large skillet or wok, heat a little more sesame oil over medium heat. Add the vegetables and stir-fry until they are tender-crisp, about 3-4 minutes.
- Toss the cooked noodles into the skillet with the sautéed vegetables. Pour the sauce over the top and mix everything together until the noodles are evenly coated and warm.
- Garnish with sliced green onions and sesame seeds on top. Serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month. Reheat with a splash of water or extra sauce.
