Preparation
- Preheat the oven to 375°F (190°C).
- Rinse the chicken breasts under cold water and pat them dry with a paper towel. Season both sides with salt, pepper, and Italian seasoning.
Cooking
- In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown but not cooked through.
- In a baking dish, pour a layer of marinara sauce, enough to coat the bottom. Transfer the seared chicken on top of the sauce.
- Spoon additional marinara sauce over the chicken pieces, ensuring they are well covered.
- Sprinkle the shredded mozzarella cheese evenly over the top of the chicken, followed by the grated Parmesan.
- Cover the dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and golden.
- Once out of the oven, let it cool for a few minutes before serving.
Notes
You can store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 25-30 minutes or use a microwave.
