Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the flour, baking soda, baking powder, and salt. Whisk together until well combined.
- In a large bowl, beat together the softened butter and white sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until just combined.
- Gradually add the dry ingredient mixture to the wet mixture. Mix until no flour remains visible.
- Use a cookie scoop or tablespoon to drop dough onto a parchment-lined baking sheet, leaving 2 inches (5 cm) between each scoop.
Baking
- Bake in the preheated oven for 8-10 minutes, or until the edges are just lightly golden. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Making the Filling
- While the cookies are cooling, beat together the softened butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
Assembling the Cookies
- Once the cookies are completely cool, spread a generous amount of filling on the flat side of one cookie, then top with another cookie to create a sandwich.
- Finish by dusting the cookies with powdered sugar.
