  • 1/2 cup cornstarch This coating creates a crispy crust.
  • Vegetable oil (for frying) Use enough oil to deep fry the chicken.
  • 4 cloves garlic (minced) Garlic adds flavor when sautéed.
  • 2 stalks green onions (sliced) Great for garnish and flavor.

Preparation
  1. Start by cutting the chicken into bite-sized pieces. Pat them dry with a paper towel to ensure crispiness when fried.
  2. In a mixing bowl, combine the salt and freshly cracked black pepper. Sprinkle this mixture evenly over the chicken pieces and toss well.
  3. Take the seasoned chicken and dredge each piece in cornstarch, ensuring all surfaces are coated.
Cooking
  1. In a deep skillet or frying pan, heat enough vegetable oil over medium-high heat until it reaches around 350°F (175°C).
  2. Carefully add the chicken pieces in batches, cooking until golden brown and crispy, approximately 5-7 minutes. Remove using a slotted spoon and drain on paper towels.
  3. In the same oil, add minced garlic and cook until fragrant. Toss in the fried chicken along with sliced green onions and stir-fry for another minute to infuse flavors.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in the oven to restore crispiness.
