  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • ¼ cup Parmesan cheese (optional) Use for additional flavor.

Preparation
  1. Preheat your oven to 425°F (220°C) to achieve perfect caramelization.
  2. Wash and dry your zucchinis. Slice them into rounds or half-moons, about ½ inch thick.
  3. In a large bowl, toss the sliced zucchini with olive oil, salt, pepper, and garlic powder until evenly coated.
  4. Spread the zucchini slices in a single layer on a baking sheet, ensuring space between each piece.
Cooking
  1. Place the baking sheet in the oven and roast for 20-25 minutes, or until the zucchini is tender and golden brown.
  2. If using Parmesan cheese, sprinkle it on during the last 5 minutes of roasting.
  3. Remove from the oven and allow to cool for a minute before transferring to a serving dish.
  4. Enjoy hot!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a freezer-safe bag for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
